Lately I’ve been craving meals that are simple, fresh, and don’t require spending hours in a hot kitchen. This time of year is all about easy dinners with bright flavors, crisp vegetables, and plenty of protein that leaves you feeling satisfied without feeling weighed down.

This week’s lineup is exactly that. From hearty salads to quick seafood recipes and an easy one pan dinner, these are the meals I’ll be making on repeat. Whether you’re meal prepping lunches or looking for a few easy weeknight dinners, I think you’ll find something to love.
