This week I have attempted Anzac Biscuits twice with this recipe.
My local version of the recipe:
85g porridge oat; coconut (des.)
100g plain flour; caster sugar; butter
1 tbsp golden syrup
1 tsp bicarbonate of soda
Mix dry. Stir syrup into melted butter.
Bicarb to 2tbsp boiling water. Add to butter.
Add to dry. Dessertspoonfuls. 8-10 @160C.
Attempt 1
Used Quaker Instant Oatmeal and Coconut Flour. They were not entirely successful. Edible but crufty.

Attempt 2
This time it was White Oats, Sponge Flour, and Better Ghee instead of butter. Much more successful! Think the ghee needs tweaking down a bit - maybe only 90g next time instead of 100g.
