According to Halacha Jewish Law on Erev Yom Kippur (the day in preparation for the fast forgiveness and return) it is a mitzvah to eat double the amount you eat on a normal day.
On this day Erev Yom Kippur We eat plantbased Kreplach dough wrapped around falafel chickpeas rice mixture and soup because this is symbolic of Hashem the Creator hiding the judgement inside kindmess and mercy at this time.

For the main course seuda hamafsechet eat Soup and Vegetables with Kreplach.
We do not prepare food for after the fast Saturday night until the fast is over.
If there are children who will eat or someone sick; prepare food today as we do every week for Shabbos.
