I’ve stuffed peppers, tomatoes, cabbage and potatoes but these onions were a first for me. They’re surprisingly easy, made with just a few ingredients and loaded with flavour. Especially when you cook them on a Traeger and they pick up an irresistible kiss of smokiness. The onions are first blanched to separate the layers then filled to the brim with a savoury mix of beef and rice before gently braising in a tomato broth until perfectly tender. They’re high-protein, low-calorie, incredibly comforting and taste even better the next day.
