If you love a good takeout-inspired dinner, this Bourbon Chicken with Fried Rice & Broccoli is such a fun one to make at home. The chicken thighs are seasoned simply and cooked right on the stovetop until they’re golden brown on the outside and super juicy on the inside. Then they’re chopped into bite-sized pieces and tossed in the best sticky bourbon sauce made with soy sauce, hoisin, brown sugar, garlic, ginger, and just a little heat from red pepper flakes. The sauce gets thick and glossy as it simmers and coats every piece of chicken perfectly.
Instead of serving it with plain rice, I made a quick homemade egg fried rice with jasmine rice, scrambled eggs, peas, carrots, and onion. It makes the whole meal feel so much more like your favorite takeout order and is honestly one of my favorite ways to make rice when I want something a little more flavorful. On the side, there’s sautéed broccoli with big squares of onion that get slightly caramelized while still keeping a little bite.
Everything comes together into the perfect sweet, savory, saucy dinner with a little bit of everything in each bite. You get the sticky bourbon chicken, salty fried rice, fluffy egg, veggies, and crisp-tender broccoli and onions all on one plate. It’s easy enough for a weeknight but still feels like something you’d look forward to making on a Friday night instead of ordering takeout. And if you don’t want to cook with bourbon, you can easily swap it for apple juice and still get that sweet, sticky sauce.
