I’m writing to you ahead of time since while you’re reading I’ll be in Georgia (the country), hopefully downing dumplings and natural wine with some of my best friends. It’s my birthday, and I can’t think of a better way to celebrate. Btw, did you know that Georgia is the birthplace of wine? Today’s recipe is another in my pursuit of Bean Salad Summer (see also - marinated bean salad, pickle-y cucumber edamame salad, pea cucumber lentil salad), in which I make a big bowl at the start of the week to eat my way through in the days ahead.

This one’s loosely inspired by the flavors of Greece, with an easy and so addictive homemade tzatziki on the side. Definitely make extra of that for more dipping all week.
