Hola! Have you made my Frijoles Charros yet? If not, you need to! This is a classic dish in Mexico but mine is the healthy version. Most charro beans recipes pile in bacon, chorizo, hot dogs, and ham all in one pot.
This is a family recipe and we have never added all that processed meat. It turns out you don’t need any of that stuff to make a pot of beans worth eating. Plus is better for you!
The base is simple: dried pinto beans simmered until tender, then combined with sautéed onions, jalapeño, Anaheim pepper, tomato, garlic, and fresh cilantro. A little vegetable shortening, two bay leaves, and dried oregano round things out. That last 15 minutes with the lid on, when the vegetables and beans cook together, is where the magic happens.
No processed meats. No complicated steps. Just a wholesome, flavorful bowl that pairs perfectly with carne asada, enchiladas, or anything else on your Mexican dinner table.
