I remember when I was younger, the only thing I wanted was for summer to arrive. Whether it was September with a year to go, or March and just around the corner, all I wanted was to be off school for two months, playing football in the sunshine (or rain, as it was Manchester) with my brother and my mates until the sun set at 10pm. To 12 year old me, this was LIVING.
My parents would tell me not to wish my life away, to stop every now and then and just appreciate how good things were, that school is the best years of everyone’s life. I never could understand that logic, and to be real with you, I still don’t. For as long as I can remember, I wanted to work, earn money, make my own way in the world and do whatever I wanted, when I wanted to do it.
So when I could, I did. At 19 I packed a bag and left for New Zealand, then Australia, then Vietnam, then South Africa. Ten years later, I’m still waiting to pack that bag and find the next stop.
But every now and then, something happens that even I can't rush past. Recently I got the chance to work with one of my dream clients: Le Creuset. A brand I only dreamt of working with three years ago when I started this journey with Tess. And although my parents may not have completely understood why a 12 year old was so desperate to leave school and get to work, they were right about one thing: stopping every now and then to take in life's wins. So that's what I'm doing right now, just taking a moment to appreciate how far Tess and I have come since day one. I couldn't be prouder of what we've built and the way we did it. So many of you helped us get here and continue to help us every day. Thank you.

Anyway - here’s the recipe I made for Le Creuset, it’s Steak Bites & Cowboy butter and its really delicious. Enjoy.
This was the first time I’d made cowboy butter. I have seen it all over my Instagram feed for years. When Tess ask me to make this one, I was quite excited to finally see if it lived up to the long hype. And sure enough, it did!
Cowboy Butter Leftovers
The cowboy butter recipe below makes enough so that there is plenty of leftovers to use throughout the week or coming months. You could easily half the recipe and have enough for just this meal, but why stop there. Cowboy butter is such a flavour bomb that you are definitely going to want more of it. It goes so well with steak, chicken and even fish. All’s you need to do is roll the leftovers into a log using clingfilm, place that in the freezer and slice a couple discs off when you need it.
Beef Bites
If like me, you end up with a decent portion of steak bites leftover then I have a killer recipe for you. Simple take the remain steak bites and add them to a pot along with a chicken stock cube and about 1 cup of water. Simmer that over low heat on the stove for 3 hours and you will have these soft delicious bites that are questionably better than the original ones. Serve that on a baked potato with a little grated cheese, chopped chives and maybe a spoon of sour cream and some tenderstem broccoli. So good!
