Small Batch of Lemonade
Go pick a half-dozen large lemons off the tree. Squeezing the lemons and straining out the pulp yields about two cups of fresh lemon juice for this recipe.
The standard American ratio for classic lemonade is 1 : 1 : 4 (Juice : Sugar : Water). I like to scale the ratios for a slightly stronger mix using a 1 : 1 : 3.5 distribution. Dropping the dilution water to 5 cups (down from the standard 6) yields a brighter, punchier citrus profile that cuts through ice cleanly. It works better when used as mixer with other drinks, like in an Arnold Palmer iced tea.

Quick Execution

Variations
1. More Tart (3 cups Lemon Juice)
Upping the juice to 3 cups shifts the ratio to 1.5 : 1 : 3.5. This works perfectly for a highly acidic, sharp style. It cuts through heavy ice melting and acts as an excellent mixer for high-proof spirits without getting lost.
2. Less Sweet (Halve the syrup components)
Halving the sugar and syrup water drops them to 1 cup sugar and 1 cup water (yielding ~1.6 cups of syrup). This creates a crisp, low-sugar variant.
Note on Dilution: Removing 1 cup of water from the syrup phase causes the base liquid volume to drop. If you still want the same total dilution as the baseline, you will need to add that missing 1 cup of water back into the final step (raising dilution water from 5 cups to 6 cups).
3. Stronger or Weaker (Adjust dilution water by ±1 cup)
Adjusting the final step is the cleanest way to tune the batch:
- 4 cups water (Stronger): Drops total yield to ~10 cups. This mimics a concentrated, restaurant-style base optimized for rapid ice melt.
- 6 cups water (Weaker): Brings the recipe back to the standard American 1 : 1 : 4 profile. Ideal for drinking immediately right out of the refrigerator without ice.
Master Lemonade Concentrate
Start with 24 lemons.
- Peel and Prep All 24 Lemons: Target: ~150-200g zest total. Using a sharp swivel peeler, strip the thin yellow zest (flavedo) from all 24 lemons directly into a large glass or stainless steel bowl.
Keep the white pith on the fruit; avoid peeling deep, as pith adds harsh bitterness.
- Muddle Peels and Start Oleo-Saccharum: 1:1 ratio by weight of zest to sugar. Weigh the collected peels on a digital scale. Measure an equal weight of granulated white sugar (typically around 150g to 200g for 24 lemons) and pour it over the peels.
Muddle firmly with a wooden spoon or muddler for 2-3 minutes to bruise the skins and press sugar into the oil glands. Cover the bowl tightly with plastic wrap and leave on the counter for 12 to 24 hours.
- Juice Immediately and Chill: Target: ~700-900ml fresh juice. On the same dirty cutting board, juice all 24 naked lemons right away. Strain the juice through a fine-mesh sieve into an airtight glass jar or pitcher.
Seal tightly and place the juice in the refrigerator.
- Combine Juice, Peels, and Citric Acid: Next Day (12-24 Hours Later). Retrieve the chilled juice from the fridge and pour it directly over the liquid oleo-saccharum and peels in the bowl.
Add 15g (about 1 tbsp) of food-grade powdered citric acid. Stir vigorously for 2-3 minutes until all remaining sugar and citric acid crystals are fully dissolved.
- Fine-Strain and Bottle: Yields ~1 to 1.2 Liters Master Concentrate. Pour the mixture through a fine-mesh strainer into your storage bottles or jars, pressing the spent peels firmly with a flexible spatula or press to wring out all remaining oil-infused syrup. Discard the spent peels.
Funnel the master concentrate into clean glass jars and refrigerate.
Master Concentrate Ratios
- Standard Lemonade: 1 part concentrate to 3 or 4 parts cold water (or sparkling water) over ice.
- Single Glass: 2 oz (60 ml) concentrate + 6 to 8 oz (180-240 ml) water.
Based on a batch of 24 average medium lemons (yielding ~150g zest, ~175g sugar, and ~800ml juice), your Master Concentrate total volume is roughly 925ml to 950ml (~1 quart / ~32 fl oz).
