I’ve got lots of ideas simmering. Since having my first baby this winter, people keep asking when I’ll return to working in the kitchen—and honestly, I don’t know. What I do know is that I absolutely love cookbooks, and I’d love for you to dive into my collection with me.

These past few months, I’ve really embraced slowing down and showing up intentionally—especially in my kitchen. With a velcro baby, even the simplest tasks were a challenge, so I had to get strategic. That started with mealtime.

This is the newest addition to my cookbook shelf—and for good reason. Caro’s recipes are approachable, flexible, and designed for busy people who still want to eat well. The best part? They’re organized by how much time you actually have to get dinner on the table.

I’ve bookmarked a few I’m excited to try this month, and I’d love for you to cook along with me. Think of this as your virtual reference point when you need inspiration (or when you just don’t feel like cooking).

A quick, adaptable grain bowl that comes together in under 30 minutes. Swap the veggies or protein with whatever’s in your fridge—Caro even has a great section on how to mix and match.

Lamb & Hummus Bowl
Fast, flavorful, and easy to bulk up with grains, greens, or pita. Store-bought hummus makes it even quicker.

Lemon Pancakes
Bright, protein-packed pancakes that work for breakfast, lunch, or dinner. Bonus: they freeze beautifully.

Braised Fish with Tomato & Coconut Chickpeas
A cozy one-pot dish that’s hearty yet light—comfort food without the food coma.

Enchilada Rice Skillet
