Ingredients
- 50 grams salted butter
- 1 x 395g can condensed milk, sweetened
- 85 grams desiccated coconut
- 1 cup caster sugar
- ½ cup water
- 1 teaspoon lemon juice or vinegar
Step One
Add the condensed milk, coconut and butter to a small saucepan. Cook over medium heat for about 10 minutes, stirring continuously until the mixture thickens and comes together.
Step Two
Transfer the mixture to a greased plate and allow it to cool completely. After mixture is cooled, lightly grease your hands and roll the mixture into small balls. Place them on a lined baking tray.
Step Three
Add the sugar, water and lemon juice/vinegar to a clean saucepan. Cook over medium heat without stirring until the caramel turns a light golden colour.
Step Four
Carefully dip each coconut ball into the hot caramel, allowing any excess to drip off. Return the balls to the lined tray and leave them to set until the caramel coating is firm and crisp.
