These are the recipes I come back to every single summer without fail. The ones that feel like the season itself — fresh tomatoes, charred corn, shrimp on ice, something slow in the crockpot while we are at the pool. Here is what has been on repeat in our kitchen this month.
Roasted Shrimp Cocktail Shrimp cocktail is one of my all time favorites and this roasted version is easy, delicious, and feels a little more special than the classic. The kind of thing that looks impressive and comes together fast.
Summer Tomato Salad with Charred Corn Fresh tomatoes and charred corn are two of my favorite things about this time of year and this salad combines both perfectly. I make it constantly from June through August and never get tired of it.
Avocado Salad Sometimes I mix up the ingredients from this one and the tomato salad depending on what looks best at the store. Both are simple, fresh, and exactly what a summer table needs alongside almost anything.
Sheet Pan Salmon with Potatoes and Broccolini I do a lot of sheet pan dinners during the summer and this one is a regular. Everything on one pan, in the oven together, on the table fast. The kind of weeknight dinner that makes the whole thing feel easy.
Potatoes au Gratin I shared these in last week’s Setting the Table. I make all of the recipes and menus I share and this one blew me away. I can’t wait to make it again.
This Greek-Inspired menu is the dinner that feels like a warm evening somewhere in the Mediterranean even when you are at your own kitchen table on a Thursday in June. The herbs, the olive oil, the lemon, the pita alongside. The table does not have to try hard when the food is this good.
The Table
• Chocolate brown bistro flatware
• Cherry red bobbin salt and pepper shakers (these are 25% off right now!)
• White ramekins (love these for everything and we are going to grab extras to make viral dot cakes this summer!)
The Menu
• Chipotle and rosemary roasted nuts
• Greek meatballs with tzatziki
• Middle eastern vegetable salad
• Warm pita
The Outfit
The two outfits for this week are casual and fun. Both include this cute t-shirt that I previously shard with either jeans or a striped skirt. I’m always including a sweater in these outfits for those cool nights and I love this red striped sweater (alternate here). These sandals show up again this week and then I love these bows.
