It’s been a week since I left ribs on my HOA president’s porch, and I’ve officially heard nothing.
At this point I’m starting to think maybe he’s just not a ribs guy.
Maybe he’s more of a wrap guy.
Honestly... it would explain a lot.
So naturally I did what any completely reasonable person would do and made him my viral bacon cheeseburger wraps.
They’re crispy on the outside, loaded with bacon, melty cheese, fresh toppings, and my homemade burger sauce. If these don’t get me removed from the HOA watchlist, I’m running out of ideas.
1 lb ground beef (80/20 recommended)
4 large flour tortillas (XL burrito size)
8 slices American cheese
8 slices bacon, cooked crispy
Shredded lettuce
Sliced tomatoes
Thinly sliced onion
Dill pickle slices
Salt and pepper
Burger seasoning (optional)
1 cup mayonnaise
¼ cup ketchup
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
1 tsp paprika
2 tbsp finely diced onion
1 tbsp pickle juice
Black pepper to taste
Cook the bacon until crispy, then transfer it to a paper towel-lined plate. Reserve a little of the bacon grease if you’d like to cook the burgers in it.
Divide the ground beef into four equal portions. Smash each one onto a hot griddle or skillet, season with salt, pepper, and burger seasoning if using, then cook until a deep crust forms. Flip, top with two slices of American cheese, and cook until melted.
In a small bowl, whisk together the mayonnaise, ketchup, mustard, Worcestershire sauce, paprika, diced onion, pickle juice, and black pepper until smooth. Refrigerate until ready to use.
Lay out each tortilla and spread a generous layer of burger sauce in the center. Add shredded lettuce, tomatoes, onions, pickles, the cheesy smash burger, and two slices of crispy bacon.
Fold the sides of each tortilla tightly over the filling, creating a sealed wrap.
Place the wraps seam-side down onto a hot skillet or griddle. Cook for 2–3 minutes per side, pressing gently with a spatula until golden brown and crispy.
Slice in half and serve immediately with extra burger sauce for dipping.
Don't overload the wrap. It might be tempting, but a tightly wrapped crunch wrap holds together better, crisps more evenly, and gives you that perfect bite every single time. And if you really want to take it over the top, toast the wraps in a little bacon grease instead of butter. It's completely unnecessary... which is exactly why you should do it.
