This is the recipe I reach for when I don’t know exactly how many will be at the table because it’s easy to add or subtract your ingredients. Scale the chicken up or down, adjust the seasoning mixture to match, and you’ve got a dinner that works as a small family meal, Sunday dinner, or to feed a crowd.
It starts with the Garlic Italian Dressing Mix and your choice of chicken. It’s simple to put together and full of flavor.
This seasoning mix works just as well on chicken breasts, boneless thighs, or tenders, or add it to your favorite veggies.
4-5 pounds chicken thighs and legs
3 tablespoons olive oil
1 tablespoon Garlic Italian Dressing Mix
Preheat oven to 375° F. Combine olive oil and Garlic Italian Dressing Mix in a small bowl. Place chicken in a baking dish, skin side up.
Brush chicken with the Italian seasoning mixture and sprinkle with salt and pepper as desired. Cover and place in a 375° F oven for 25 to 30 minutes.
Remove cover, brush with Italian seasoning mixture again and bake uncovered for an additional 15 to 20 minutes or until golden brown and internal temperature reaches at least 165° F. Enjoy!
Tip: This Italian seasoning mixture can also be used on chicken breasts, boneless chicken thighs, or tenders. Cooking times will vary.
