Ingredients:
1.5 lb boneless skinless chicken breast
1 red bell pepper
1 orange bell pepper
1 yellow onion
2 tbsp cooking oil (olive or avocado)
2 tbsp fajita seasoning
juice of 2 limes
for serving: cooked rice, fresh cilantro, lime wedges
Honey Chipotle Sauce (This is optional but I promise you’ll want to make it)
1/4 cup mayo
1-2 tbsp diced chipotle peppers in adobo sauce
1 tbsp honey
1/2 tsp garlic powder
juice of half a lime
salt and pepper to taste
How To:
Preheat your oven to 375ºF
To a baking sheet, add the chicken, veggies, olive oil, fajita seasoning and lime juice.
Bake for 20-25 minuter or until the chicken reaches 165ºF internally. (I also love making this on the Blackstone if you have one!)
While the fajitas are baking, make the Honey Chipotle Sauce: Add everything to a bowl and mix until combined.
To serve: Add cooked rice to a bowl, and add your fajitas and top with cilantro, honey chipotle sauce and some fresh lime wedges.
This is a great meal to make ahead for meal prep! I’ve also made this several times for families who just had a baby and it’s always a hit.
