I had a bag of frozen cod filets in the freezer to use up this week, and what better way than some fish tacos.
Ingredients:
1 5 oz wild caught Cod filet - thawed
1 tbsp blackened seasoning (for fish)
spray oil
1 cup of bagged vegetable slaw mix
2 tbsp mayo
1 tbsp diced chipotle peppers in adobo sauce
1/2 tsp blackened seasoning (for slaw)
1 tbsp honey
juice of 1 lime
salt and pepper to taste
fresh cilantro
3 small corn or flour tortillas
for topping: lime wedges, diced avocado, fresh jalapeño slices, fresh cilantro
How To:
Preheat your oven to 375ºF
Pat the fish dry with a paper towel, then place on a parchment lined baking sheet.
Coat the fish with some spray oil and the blackened seasoning, then bake for 15 minutes or until it reaches 145ºF internal.
While the fish is cooking, make the slaw: add the vegetable slaw mix, mayo, chipotle peppers, 1/2 tsp of blackened seasoning, honey, lime juice, salt, pepper and some fresh cilantro to a mixing bowl. Mix until well combined. You guys know I love a sauce with every meal, but this slaw acts as the sauce in this recipe and it’s so good!
Optional, but at this point you can warm 3 corn or flour tortillas on the stovetop!
Assemble your tacos - starting with the tortillas, then slaw, avocado, the blackened fish, cilantro, jalapeño slices and a squeeze of lime!
This recipe is perfect for a single serving, so if you’re cooking for several people, just multiply as needed!
