this one was completely “my” recipe… meaning i came up with the idea, gave very detailed instructions, and then arrived just in time for the final touches and taste test 😂
honestly, it turned out so good! warm, comforting, full of protein and packed with all the flavors i had been craving without being too heavy or too acidic. it’s somewhere between dumpling soup, chicken soup and a little egg drop moment, and it makes a huge pot, which means… plenty of leftovers.
we cooked the chicken breasts directly in the broth, pulled them out, shredded them and added everything back into the soup. i wanted this one to be extra high in protein, so we doubled the chicken. you can absolutely use shredded rotisserie chicken instead if you need dinner on the table a little faster.
the vegetables keep it fresh and light, the mini wontons make it feel like proper comfort food and the little bit of butter stirred in at the end gives the broth a little silky finish. that part is technically optional, but i’m not sure i recommend skipping it. and if your tummy is a-ok with acid and spicy, do what my stepson does and stir in some spicy crunch sauce to give it an extra kick.
