5-ingredient kale caesar salad (gluten free, 20 minutes)

Is this recipe gluten free? All my recipes are! I used certified gluten free tater tots and gluten freebreadcrumbs. I linked the exact brands I used below.

gluten free | dairy free option | nut free

serves 2 | prep 10 min | cook 12 min | 20 minutes total

  • 1 large bunch kale, stems removed and torn (massaged with 2 tbsp olive oil, Salt and pepper)

  • 16 to 20 tater tots, labeled certified gluten free

  • 4 tbsp gluten free caesar dressing

  • Shaved parmesan for topping

For the chicken cutlet (or you can use gluten free chicken tenders!):

  • 2 chicken breasts, pounded thin

  • 2 tbsp olive oil

  • 1 cup gluten free Italian breadcrumbs

  • Salt and pepper to taste

  1. Pound chicken breasts thin. Brush each side generously with olive oil then press firmly into gluten free breadcrumbs until fully coated on both sides. Season with salt and pepper.

  2. Preheat your air fryer to 390 degrees. Add the breaded chicken cutlets and tater tots to the air fryer basket at the same time. Air fry for 10 to 12 minutes until the chicken is golden and reaches an internal temperature of 165 degrees and the tater tots are crispy. Check your tater tot package directions as timing may vary slightly!

  3. While everything air fries massage the kale with 2 tbsp olive oil, salt and pepper until the kale softens and darkens slightly. This takes about 1 to 2 minutes of massaging — do not skip this step!

  4. Divide the massaged kale between two bowls. Drizzle 2 tbsp caesar dressing over each salad and toss to coat.

  5. Slice the chicken cutlets and lay on top of each salad. Add 8 to 10 tater tots to each bowl as your croutons. Top with shaved parmesan.

  6. Serve immediately!
