Good afternoon!
I hope you had a very Happy 4th of July. Ours was pretty low key, which was exactly what we needed. We usually go to the parade in the village of Southampton, but it was over 90 degrees, so we decided to sit it out. Instead, we went to the beach in our neighborhood and spent most of the day swimming in the bay to stay cool. Iris had a blast and that’s all I can ever ask for. Ryan made his famous ribs and we all ate more than we should have (but that’s what holidays are all about, right?!). When it started to get dark, we walked back to the beach for the fireworks. Almost the moment they were over, the wind shifted, and there was a collective “uh oh” from the crowd, as we could all tell a storm was coming, and it was coming FAST. Ryan grabbed Iris and we RAN home. The wind was whipping and sand was blowing everywhere, it felt like a scene from a movie. We got home just as the big rain drops started to fall, then the craziest rain storm began. Luckily we were safe and sound, and will remember that forever.
Today, we posted a new episode of It’s Not Complicated. I am so excited to share it with you because it is our first episode that we filmed from my favorite place, the Hamptons. This is my 23rd summer here, and I love it more and more every year. There are many things that make it special to me, and one of those is the farms. In this episode, I take you shopping at my number one, Green Thumb in Water Mill, a family farm that was founded in the 1600s. I get my ingredients there to make one of my go-to menus for a dinner party. I have friends for dinner quite often, and my formula is some sort of grilled protein, some sort of carb “salad” (a grain salad, a pasta salad, etc) that is made in advance, and a green salad. For this dinner, I share my recipe for a Grilled Flank Steak with Chimichurri, Oil and Vinegar Potato Salad, and a Simple Green Salad with Dijon Vinaigrette. It’s simple, and easy-breezy, just how I think a summer meal should be.
Let me know what you think. I sooooo appreciate your support in this new venture! Ryan and I are having a blast making this show from home.
Lots of love,
— Katie
