This recipe came about when I was at the Farmers’ Market for my weekly run and I passed by some sweet corn on my way to my fave lettuce farmer. We are in PEAK corn season right now so of course I had to grab some.
Along with my weekly avocado, herbs & citrus re-up I thought this charred corn and avocado salsa would be great and so simple as we head into the hotter months of summer!
Tip: if you don’t have a gas stove or a grill, just grab some fire roasted frozen sweet corn in the freezer aisle of your local grocery store — totally fine! Directions below are for if you have a gas stove. Also, if you don’t want to have it with salmon, it will also go great with some grilled steak or chicken!
