Hi! If you’re new here, on Tuesdays I devote my newsletter to “I Love Lunch” and include an easy lunch recipe for paid subscribers. To me, lunch recipes are especially simple to make and simple to clean-up. Of course you can make the recipe for any mealtime that you’d like! I always include a number of helpful notes for paid subscribers (i.e. ways to make vegetarian/vegan/gluten-free versions of the recipe and other fun notes/ideas).

Want today’s recipe + thorough list of helpful notes?? Become a paid subscriber today!

Today’s recipe is a great summer version of this sheet pan gnocchi recipe I shared last year (that one included sausage, spinach and a creamy pesto sauce).

For today’s, we’re taking advantage of the ease/convenience of store-bought shelf-stable potato gnocchi and frozen shrimp. Combined with some summery corn and fresh kale, it’s a very delicious and well-balanced meal.

It was so quick and easy and I am so excited to share it with all of you today! Like the winter version, this recipe is also endlessly riffable. For paid subscribers, below you’ll find the recipe, plus ideas for:

  • videos of my favorite tricks: the easiest way to shuck corn and the easiest way to cut a bunch of cherry tomatoes in half

  • my gluten-free friends

  • my vegetarian friends

  • my vegan friends

  • my friends who don’t like kale

  • my friends looking for additional combos

Come join me this Saturday in Northampton, MA and/or next Thursday in Newburgh, NY!!! Each of the graphics below is linked and all info is also here at 831 Stories.

P.S. If you’ve read the book, do you know that I wrote an epilogue? And there are recipes and merch, too?? AND FAN FICTION???! Head here!!!!

Here’s a little step-by-step grid for you (who doesn’t love a process story??).

And below, for my paid subscribers, the recipe written out with exact amounts and instructions, plus notes for:

  • videos of my favorite tricks: the easiest way to shuck corn and the easiest way to cut a bunch of cherry tomatoes in half

  • my gluten-free friends

  • my vegetarian friends

  • my vegan friends

  • my friends who don’t like kale

  • my friends looking for additional combos

  • All of the above as a PDF!

  • One 1-pound (or thereabouts) package shelf-stable potato gnocchi
