I threw this snack mix together for our pre-baby bash a few weeks ago and to my surprise, the recipe ended up being highly requested. So I retraced my steps and think this version wound up being even better than the first! I used pretzels, buttery Ritz crackers and pecans but really any snacky things with craggily textures would work well here. My hot honey is pretty hot but feel free to ramp up the spice with an extra hit of red pepper flakes or chili powder, if you like.
Serves: 8-12
160g (about 4 cups) pretzels
112g (about 2 cups) mini Ritz crackers
100g (about 1 cup) pecans
60ml (¼ cup) avocado oil
60g (¼ cup) unsalted butter, melted
2 Tbsp hot honey (or use regular honey and sub in ½ tsp chili flakes)
1 Tbsp honey mustard
2 tsp Worcestershire
40g (3 Tbsp) dark brown sugar
1 Tbsp + 2 tsp mustard powder, divided
1 tsp smoked paprika
3 tsp onion powder, divided
1 tsp garlic powder
½ tsp kosher salt, plus more
Preheat the oven to 250°F. Line two large baking sheets with parchment paper and set aside.
In a large bowl, mix together pretzels, crackers and pecans
In a medium bowl, whisk together oil, butter, honey, mustard, Worcestershire, sugar, 1 Tbsp mustard powder, paprika, 1 tsp onion powder, garlic powder and ½ tsp salt. The mixture will thicken up slightly as you whisk it up.
Pour over the snack mix and toss thoroughly until everything is evenly coated. Divide snack mix between the two baking sheets and spread into an even layer. You want to avoid things from overlapping too much for maximum crunch.
Bake for 35-45 minutes, stirring every 15 minutes, until golden. Remove from the oven and allow to cool for 10 minutes. The snack mix will harden up a bit more during this time (like granola does once cooled!).
Add snack mix to a large ziploc bag. Sprinkle over 2 tsp mustard powder, 2 tsp onion powder and an extra pinch of salt (have a taste beforehand to determine how much more salt you want to add to your mix). Close the ziploc and shake well to evenly coat the snack mix.
Store cooled snack mix in an airtight container. Tastes even better the next day!
