Welcome back to the Mini Meal Prep Method — where we skip the marathon cooking sessions and focus on a handful of smart shortcuts that make the whole week easier. Everything is simple, everything has a purpose, and none of it will take you more than an hour.
This week’s prep has a different angle than usual and honestly one of my favorites so far: eating your skincare.
Because the truth is, the most effective thing you can do for your skin this summer isn’t a new serum or SPF (though those matter too). It’s what you’re putting on your plate. Hydration, antioxidants, omega-3s, beta carotene, collagen-building nutrients — the foods on this list deliver all of it from the inside out.

Hibiscus Ginger Lemonade
Hibiscus is one of the most antioxidant-rich plants you can consume. It’s loaded with anthocyanins, the same compounds that also gives blueberries and pomegranates their skin-protective power. Anthocyanins neutralize free radicals that break down collagen and accelerate skin aging. The ginger keeps everything anti-inflammatory, and the lemon adds vitamin C which is essential for collagen synthesis.
Make a big batch and keep it in the fridge all week.
Makes about 4 servings
Ingredients:
4-6 NOW Foods organic hibiscus tea bags
1/2 inch fresh ginger, peeled and sliced
4 cups boiling water
1-3 tbsp raw manuka honey or maple syrup
2 lemons
Ice to serve
Instructions:
Steep hibiscus tea bags and ginger slices in boiling water for 10-15 minutes. The longer it steeps the more concentrated and deeply colored it gets. Remove tea bags and ginger.
To a blender add the tea, lemons, honey while still warm until dissolved. Taste and adjust sweetness.
Refrigerate until cold. Serve over ice.
How to use it:
Sip throughout the day as your summer hydration
Pour over ice with sparkling water for a mocktail moment
Use as the liquid base in a smoothie for an antioxidant boost
Freeze into ice cubes and add to water all week
Blueberry Chia Pudding
Chia seeds are one of the most skin-supportive foods you can prep ahead. They’re rich in omega-3 fatty acids which maintain your skin barrier and reduce the inflammation that shows up as redness, breakouts, and dullness. They also absorb up to ten times their weight in liquid which means they’re genuinely hydrating from the inside out. The blueberry milk adds another layer of antioxidant support.
Makes 2 servings
Ingredients:
¼ cup NOW Foods chia seeds
3 cups almond milk
¼ cup vanilla protein powder
1 cup frozen blueberries
pinch of salt
For topping:
fresh blueberries
almond butter
Instructions:
In a blender combine the milk, protein powder, blueberries and salt.
In a container with a lid whisk together the chia seeds, and blueberry milk. Let sit 5 minutes then whisk again to prevent clumping. Cover and refrigerate overnight or at least 4 hours until thick and pudding-like.
Spoon chia pudding into glasses and top with blueberries and almond butter. Store in the fridge for up to 5 days.
How to use it:
Easy breakfast or snack
Add to smoothies for a fiber and antioxidant boost
Add to a yogurt bowl for fiber and antioxidant boost
Pack into a jar for an on-the-go breakfast
Peach Watermelon Salad
This salad is summer in a bowl and it’s doing so much more than it looks like. Watermelon is over 90% water making it genuinely hydrating, and it’s one of the richest sources of lycopene (the antioxidant that protects your skin from UV damage and keeps it looking luminous). Peaches add vitamin C and beta carotene for collagen production and that summer glow. Pumpkin seeds bring zinc which is essential for skin healing and collagen synthesis.
Makes 4-6 servings
Ingredients:
4 cups watermelon, cubed or cut into triangles
2 ripe peaches, sliced (can sub sliced mango!)
1 serrano pepper, thinly sliced (these are spicy!!! seeds removed for less heat)
3 tbsp NOW Foods pumpkin seeds
Juice of 2 limes
Pinch of sea salt
Tajin to finish (optional but highly recommended)
¼ cup fresh cilantro, roughly chopped (optional)
Instructions:
Combine watermelon and peaches in a large bowl. Add serrano and cilantro. Squeeze lime juice over everything and toss gently. Season with salt. Top with pumpkin seeds and Tajin right before serving.
How to use it:
Light and hydrating snack
Side dish at any summer cookout
Alongside grilled fish, shrimp, or chicken
As a fresh topping for fish tacos
With cotija cheese crumbled on top for a more substantial salad
Chicken Pasta Salad with Lemon Basil Pesto
This is the shortcut that does the most heavy lifting all week. The quinoa penne is a complete protein and a great source of fiber…both of which support stable blood sugar which directly impacts skin clarity and collagen production.
I like making this with 16oz of pasta to have throughout the week or larger gathering. You can do 8oz of pasta and adhust the pesto amount to your liking. I typically keep the veggie amount the same.
Makes 4-8 servings
Lemon Basil Pesto:
2 cups fresh basil, packed
¼ cup NOW Foods pine nuts
2-4 tbsp NOW Foods extra virgin olive oil or avocado oil
2 cloves garlic
Juice of 1 lemon
½ tsp sea salt
3-6 tbsp water to thin
Chicken Pasta Salad:
8-16 oz NOW Foods quinoa penne
1 lbs chicken breast or thighs, cooked and chopped
1 batch pesto
1 pint cherry tomatoes, halved
1 small cucumber, diced
1 bell pepper, diced
Salt and pepper to taste
Instructions:
For the pesto add basil, pine nuts, garlic, lemon juice, and salt to a food processor. Pulse until roughly combined. With the motor running slowly drizzle in oil until smooth. Add water one tablespoon at a time until you reach your desired consistency. Taste and adjust salt and lemon.
Cook quinoa penne according to package directions. Drain and rinse under cold water to stop cooking. Toss immediately with half the pesto while still slightly warm so it absorbs the flavor. Add chicken, tomatoes, cucumber and bell pepper. Toss with remaining pesto. Fold in arugula right before serving. Season with salt and pepper.
How to use it:
Lunch all week straight from the fridge
Easy side for a summer party or dinner
Omit the chicken and serve with protein of choice
Mango Carrot Gummies
I saved the best for last. These are the most fun thing on the menu and genuinely one of the most skin-supportive things you can make. Mango and carrot are both loaded with beta carotene which your body converts to vitamin A (essential for skin cell turnover, collagen production, and that summer glow everyone is chasing). The NOW Foods gelatin provides the collagen building blocks your skin needs directly. And they taste like candy.
My kids are obsessed. I am obsessed. Make a double batch.
Makes about 20-24 gummies
Ingredients:
1 1/2 cups mango or orange juice
1/2 cup carrot juice
1-2 tbsp Manuka honey (optional)
2 tbsp lemon juice
1/4 cup collagen peptides (optional for extra skin support)
4-5 tbsp NOW Foods beef gelatin
1/2 cup juice or cold water
Instructions:
Bloom gelatin first. Sprinkle gelatin over cold water or juice in a small bowl and let sit 5 minutes until it absorbs the water and becomes gel-like. If there is still gelatin powder add a touch more liquid.
Combine mango/orange juice, carrot juice, lemon juice, collagen and honey in a small saucepan over low-medium heat. Warm until just steaming (do not boil!). Add bloomed gelatin and whisk continuously until fully dissolved.
Pour immediately into a glass container or silicone molds.
Refrigerate for at least 2 hours until fully set. Slice or pop out of molds and store in an airtight container in the fridge for up to 2 weeks.
