Hiii friends!

It’s a beautiful and hot day here in Franklin, TN. We’re headed to a friend’s house in a bit for a backyard BBQ/playdate (for both the adults and kids), my favorite.

I can’t help but feel like everything I do might be one of my “lasts” before baby comes?! I’m 37.5 weeks today, and honestly I’m just hoping he stays put until after the 4th... mostly because that’s when my doctor gets back from vacation. 🫣 After that? Game on.

Anyways... back to the lemons.

As I was thinking about what to bring, one of my FAVORITE summer desserts immediately came to mind: lemon possets. 🍋

They’re one of my favorite things to make for a hostess because they feel thoughtful, look impressive, and couldn’t be easier. I love serving them right in the lemon shells so they can pop them in the fridge and enjoy one whenever they want over the next few days. It feels less like showing up with dessert for that night (which can sometimes feel like stepping on toes) and more like leaving behind a little hosting gift.

Beautiful and delicious!! The best part? You only need three ingredients. No eggs, no gelatin, no cornstarch. The acid from the fresh lemon juice reacts with the cream and naturally thickens it as it chills, creating the dreamiest, SILKY texture all on its own.

Makes: 6 lemon halves (or 6 small dessert glasses)

  • 2 cups heavy cream

  • ⅔ cup granulated sugar

  • 5 tbsp fresh lemon juice (about 2 large lemons)

Prep the lemons: If you’re serving these in lemon shells, slice 3 lemons in half lengthwise and carefully scoop out the flesh (save it for the juice!). Set the shells aside.

Heat: In a medium saucepan, combine the heavy cream and sugar. Bring to a gentle* boil over medium heat, stirring until the sugar dissolves. Once boiling, let it simmer for 3 minutes.

Whisk: Remove from the heat and whisk in the fresh lemon juice. No eggs or gelatin needed, the lemon naturally thickens the cream as it chills.

Fill & Chill: Carefully pour the mixture into your lemon shells (or small glasses or ramekins). Refrigerate for at least 4 hours, but overnight is even better.

I usually keep mine simple with a little fresh lemon zest and one dainty lil blueberry. If you want to amp it up, try crushed shortbread cookies, toasted meringue, or a thin layer of sugar torched until crisp for a crème brûlée-inspired finish.

  • Fresh lemon juice is a must.

  • Don’t skip the 3-minute simmer, it’s what helps the possets set.

  • They’re even better made the day before.

  • No lemon shells? Small glasses, jars, or ramekins work perfectly.

Hosting a crowd? Double the recipe! It doubles beautifully and is one of my favorite make-ahead desserts for summer gatherings.
