The last time I wrote that, it was last November—it’s been nearly a year since the last edition of the series, but we are back and better than ever with a new list for back-to-school season! I know we all need it more than ever this time of year.

While the specific series has some unique characteristics, this newsletter was actually born out of all the love my budget grocery series got from you all back in 2023, when I kicked it off. I wanted to share MORE grocery lists + dinner plans, and now I do! There are over a year’s worth of plans in the archive, waiting for you to dive in. My cookbook was also inspired by the series, complete with 12 more weeks of plans 💗

If you’re not familiar with how the budget series works, I create an exact, budget-friendly (somewhere between $50 and $75) grocery list and develop five easy meals—each making four servings—that you can follow with nothing leftover at the end.

It’s all about efficiency… and making simple ingredients taste delicious!

Achieving a $60 list in 2026 is much harder than it was in 2023; I won’t lie. But I continue to lean on the same principles to keep costs down, with a bit more creativity: low-cost cuts of meat, veggies and plant proteins to bulk up meals, and simple spices and pantry staples across all of the meals.

This week’s meals include a one-pan taco skillet, a dump-and-bake pasta, a delicious and saucy one-pan chicken dish, and a homemade pizza you can prep ahead. All are plant-, protein-, and fiber-packed, and come in at $3 per serving!
