Happy August!
A new month = a new seasonal produce guide!
August is packed with some of my favorite fruits and vegetables of the year, specifically corn, but we also have juicy tomatoes, peaches, watermelon, eggplant and more!
Below you’ll find a list of what’s in season this month, plus plenty of ideas to help you make the most of each ingredient while it’s at its peak.

Tomato: Toss into an orzo salad, slow-roast until jammy and spoon over vegan ricotta on toast, or blister and toss with your favorite pasta.
Eggplant: Char until smoky for dips and spreads, cube and toss into a hearty chickpea stew, or stuff and bake for a filling dinner.
Green Beans: Blister and toss with garlic and lemon, stir-fry with ginger and sesame, or make a marinated bean salad.
Corn: Spoon over pizzas with basil and hot honey (don't knock it 'til you try it!), make corn fritters, or stir into a fresh corn salsa for tacos and burrito bowls.
Cucumber: Layer into sandwiches, toss with sesame oil and soy sauce for a simple cucumber salad, or sprinkle with flaky salt for an easy snack.
Bell Peppers: Stuff with quinoa and beans for an easy dinner, blend into a creamy pasta sauce, or dice into a couscous salad.
Sweet Onion: Caramelize and add to sandwiches, pizzas, and grain bowls, add on top of focaccia before baking, or roast with other summer vegetables for an easy sheet pan dinner.
Figs: Layer them onto flatbreads with caramelized onions, roast them until jammy and spoon over ice cream or oatmeal, or enjoy on it’s own as a snack.
Peaches: Chop them into fresh salsa for tacos, bake them into a crisp, or blend them into homemade peach vinaigrette for summer salads.
Blackberries: Stir them into chia pudding, add them into baked oatmeal, or cook them down into a blackberry syrup for sparkling water, cocktails, or pancakes.
Raspberries: Make a quick raspberry chia jam, add to a spinach salad with toasted pecans and balsamic dressing, or cook into a simple raspberry sauce for pancakes or waffles.
Watermelon: Blend with ginger, sparkling water, and lime for a fun mocktail, cube and add to a fruit salad, or grill thick slices for a smoky, but sweet side.
