Welcome to week 4 of my No Stove Summer Series!

One of my favorite ways to keep dinner quick and easy in the summer is utilizing the crockpot as much as possible, and this Mongolian Chicken never disappoints! The perfect savory and sweet flavor combination makes it a great kid-friendly option. This dinner takes me less than 10 minutes to prep, which is exactly what I need for these busy summer days!

On nights when I don’t have the energy to cook, I lean on family-friendly meals like these to really make the evenings go a lot smoother. The aromas of the ginger, soy and garlic, give it such amazing flavor! Plus, it's a great for easy meal prep during the week. One of my favorite healthy, weeknight meals I like to keep for days when I really don't have much time in the kitchen.

Delicious: Rich, garlicky sauce that tastes better than takeout. I love pairing this meal with broccoli, green onions and jasmine rice.

Minimal Prep: This recipe only takes 10 minutes to prep, which is perfect to truly set it and forget it! I like to prep this before heading to the pool for a few hours with my kids.

Family-Friendly: This dinner has a lot of different spices utilized in the recipe. However, the combination of the sweet and spicy give the perfect balance that can also be adjusted based on family preference.
