A Journey to Innovate Vegan Cheese

Innovation starts with a conversation, and the innovation journey involves tens or hundreds of conversations. To have a pleasant journey to innovation, you must learn how to hold conversations and refine how you process the information involved. This is the essence of disruptive learning experiences, where the goal is to break through conventional thinking and discover new possibilities.

Travel to innovation is a destination. You must have a goal in mind, a desire for something, a curiosity to learn about a subject and a feeling that if you innovate, you will achieve something better than the current scenario. For me, this journey began with a simple curiosity: how is vegan cheese created?

The first step on my journey was to participate in the Hacker Dojo Lightning Talks. I was looking to bounce what I learned in a conversation on how to be disruptive held early that day with Gregory Becker, a good friend who helped me to understand how we learn. These talks are a hub of innovation, where thinkers, doers, and creators gather to share their insights and discoveries. The synergy in these events is palpable, with each conversation sparking new ideas and possibilities. One particular talk stood out to me: a presentation on the art and science of vegan cheese making.

To truly understand the process, I needed to immerse myself in the language of vegan cheese. This meant learning terms like "culturing," "fermentation," and "cashew base." Each term opened a new door of understanding, helping me grasp the complexities and nuances of vegan cheese production.

Next, I sought out experts in the field. Mohan and Rudy, innovative food scientists passionate about plant-based products, became vital mentors. Through our conversations, I learned about the latest advancements in vegan cheese technology and the challenges innovators face in this space.

Listening is a crucial part of the innovation process. I attended Synthetic Biology, Biohacking & Cheese—Real Vegan Cheese Science Night, which reminded me of some cheese factory visits some time ago. I engaged in countless discussions with industry professionals. Each interaction provided valuable insights and helped refine my understanding of the field.

I explored the history of vegan cheese, from its humble beginnings to its current status as a mainstream food product. This included learning about the pioneers who first experimented with plant-based cheese and the technological advancements that have made modern vegan cheese possible.

The journey revealed many positive aspects of vegan cheese innovation. The creativity and passion of the people involved were inspiring. I discovered how vegan cheese can cater to dietary needs, promote sustainability, and offer delicious alternatives to traditional dairy products.

However, the journey also highlighted the challenges. Producing vegan cheese that matches the taste and texture of dairy cheese is a significant hurdle. Economic and scalability issues also need to be addressed to make vegan cheese more accessible and affordable.

To define where to go next, I combined the insights from my disruptive learning experiences with the principles of synergy and traction. I mapped out a plan that included further research, collaboration with experts, and pilot projects to test new ideas.

Throughout this journey, I met incredible people who shared my passion for innovation. Rudy and Mohan, fellow innovators in the vegan food industry, provided invaluable support and encouragement. Their platform, Curioledge, emphasizes the importance of curiosity and knowledge in driving innovation.

Ultimately, my goal is to contribute to the vegan cheese industry by developing a product that is not only delicious but also sustainable and accessible. This journey has shown me that innovation is a continuous process of learning, adapting, and pushing boundaries.

Innovation starts with a conversation, and my journey to learn how vegan cheese is created was no exception. Through disruptive learning experiences, leveraging synergy, and focusing on traction, I have laid the foundation for a project I believe can significantly impact. This journey has taught me that we can achieve extraordinary things with curiosity, collaboration, and perseverance.
