I escaped to San Francisco last week to visit one of my dearest friends & kick off early birthday festivities for her. Gina’s my other half in so many ways. People often comment we look like sisters when they see us together, or in photos. We met back in the early days of Twitter, when a mutual friend suggested we’d get along.
Our friendship sparked immediately, and over the last 17 years has grown into a sisterhood. She’s who I go to when I need some wisdom to calm the more chaotic parts of my Scorpio personality. Our relationship is built on love, free of judgement, and a gift I cherish every single day.
We’d been trying to make this San Francisco trip happen for years, so when I floated the idea a month ago about coming to visit as a birthday gift, I’m sure she was cautiously excited. I found a decent enough airfare, and decided if not now, when? The trip was the perfect winter detox, and nourished my soul. It’s so important to make time for the people and things that nourish us mentally and emotionally.
The day after I got back home, I sent her a text message for a very yummy air-fryer recipe hence the title of this post. It comes together super fast—really. I prepped the whole thing 5 minutes before a work meeting, and lunch was ready by time the call was over.
I served it over an arugula salad. You do you, so if you prefer a starchy side, mashed or roasted potatoes would be excellent. Tossing with cooked pasta would also be great. You can even throw in a handful of spinach to get some fiber and greens into your meal (the radiant heat from the roasted chicken and hot pasta will be enough to wilt the spinach). Be sure to read the notes at the end of the recipe for some other serving ideas.

New Cookbook Alert I’ve been thrilled for months about Domenica Marchetti’s forthcoming book, Italian Cookies, and next month it’ll finally be out in the world. Her tour schedule is listed here in her Substack, Buona Domenica. I’m hoping there might be a NYC stop at some point. It would be lovely to see her in person again.
