Pairing delicate shellfish with heavy dairy demands strict temperature control and a sharp acidic counterpoint.

The foundation of this dish is a garlic-infused béchamel, stabilized with Fenugreek Gouda and mascarpone. The fenugreek provides an earthy maple profile that cuts the milk fat and aligns with the natural sweetness of the shell stock. Mini rigatoni acts as the binding vehicle to hold the dense emulsion.

The critical point of failure in seafood pasta is thermal shock. Dropping cooked lobster or lump crab into a simmering cheese sauce will instantly seize the meat.

To bypass this, a halved lemon is dry-charred in cast iron, converting sharp citric acid into a smoky, muted juice. The cold lump crab and lobster meat are dressed in this blackened citrus off the board to protect the dairy from curdling.

Once the pasta and cheese sauce are fully emulsified on the stove, the pan is pulled completely off the heat. The dressed seafood is folded in last. The residual thermal mass of the pan and the hot pasta brings the meat to exact service temperature in seconds, maintaining the integrity of the protein.
