Happy almost Mother’s Day! I wanted to share a lineup of some recipes that are perfect for this weekend. I recently hosted an afternoon tea for some of the moms in my life: my own mother, my grandmother, my aunts, my sister in law and my cousin. It was such a fun, delicious and relaxed afternoon, and I really enjoyed getting to celebrate them before the actual holiday- which really is a day that moms deserve to spend in bed with as few obligations as possible!
I made three different tea sandwiches, including Chicken Salad with Caramelized Leeks, Egg Salad with Watercress and, of course, Herbed Cream Cheese with Cucumber sandwiches. Plus a Pavlova with Marinated Berries, and some British-style scones. (I don’t have a recipe of my own, so I used this one from the BBC. They were incredible!)
Of course, we documented the whole ordeal for YouTube, which will be hitting your algorithm very soon! Ahead of the weekend, I wanted to get these recipes in your hands so you can grab the ingredients. Plus, I’ve shared a little miniseries of two brand new brunch recipes for Mother’s Day if that’s more your speed! We have a Brioche Breakfast Strata, and some French Toast with Corn Flake Almond Crunch. Both of these are incredible, and the strata is completely make ahead friendly.

The full lineup of recipes is below! Printable PDFs for each recipe are available at the bottom of this post. For the tea sandwiches, I’ve provided recipes for the chicken salad and egg salad on their own, not as just a sandwich. Since really, you could use them in any way you see fit! In general for tea sandwiches, use a soft, thinly sliced bread, and refrigerate the sandwiches after assembling so you get nice clean cuts when removing the crusts.
Onto the recipes!
Ingredients:
4 large split chicken breasts
1 ½ Tbsp neutral oil
2 tsp salt
1 tsp black pepper
2 large leeks
2 Tbsp butter
4 celery stalks, diced
¾ cup mayonnaise
2 Tbsp dijon mustard
1 Tbsp tarragon vinegar
2 Tbsp minced parsley
1 Tbsp minced tarragon
