It may seem like a bit of a “duh” recipe, but I ask you… when is the last weekday you woke up and thought “I deserve french toast!” Yeah, that’s right. A before work french toast. It’s as easy as your eggs and toast but WAY more fun.
While most people would say they don’t need a recipe for french toast... may I dare say that if more people remembered that it’s a snap to throw together, then more people would be eating it. Unless you don’t like caramelized sugar and joy.
If you already whisk your eggs in a bowl before cooking them up, then you’re not even messing up any extra dishes. So what are you waiting for? This is your sign to make french toast tomorrow!
I often make this for myself so the recipe is for one. Double, triple, quadruple at your pleasure.
2 slices of thick bread (challah, brioche, sourdough, they’re all good)
1 large egg
2 tablespoons milk of your choice
2 teaspoons maple syrup, plus extra for serving
Pinch of fine kosher salt
Sprinkle of cinnamon
1 tablespoon olive oil
Heat a large nonstick pan over medium heat.
In a shallow bowl whisk together the egg, milk, maple, salt and cinnamon.
Submerge bread slice one in the egg mixture. Let it sit for a few seconds and give it a flip.
Pour the olive oil into the hot pan followed by the first piece of french toast. Dip slice two in the egg. Mix and add to the pan. Pour any remaining egg over the bread in the pan.
Cook on side one until it’s golden brown and a little crispy around the edges, 2 minutes ish. Flip and repeat.
Serve with fresh fruit, more maple, and a little butter if you desire!
