editor’s note: what makes this eggnog so special, you ask? WELL what’s important is that THIS EGGNOG IS. dairy free. yes; you heard it. COMPLETELY dairy free just like all the recipes here and it’s also the best eggnog ever1. with this recipe, you can adjust the amount of sugar to your liking and it will always be fresh and delicious :)2

& to start off, of course we began with a rating disagreement.
I said “your eggnog recipe is great” and she said
“idk about that, but when we take a picture we should add some nutmeg………..wait”
[this was how we remembered some key ingredients had gotten a bit lost this year]
so. without further ado:
THE RECIPE
sucks ☐ / passable ✓ / great ☐ / perfect
We start with a misnomer. No eggs!
Almonds sort of look like eggs. Okay, maybe not.
But almonds are the basis for the nog. No worries, this nog isn’t crunchy!!!!
Here’s how it actually goes:
• one 25.4 fl oz container almond vanilla Califia creamer
• one 16.9 fl oz container almond Califia heavy cream
• a pour of rum (get a rum that tastes buttery, it tastes better in the nog)
• yes there was vanilla in the Califa! But add a teaspoon of your own
• 1/8-1/4 tsp nutmeg3
• sugar to taste (I like it less sweet, but I do add like a quarter cup to start)
• ½ tsp turmeric to make it look like “real” egg nog (though I think the real egg nog you can buy in the store also has fake coloring). So. You’re even.4
• a few strands of saffron5
Stir everything together in a pitcher. For extra festivity when serving, add some spray whipped cream and a sprinkle of cinnamon and the elusive nutmeg.

editor’s footnote: i don’t much like very sweet eggnog. the stuff you buy in the store is like, good in theory……… and then they ruin it by making it complete unTasteable… but. if you like very sweet eggnog. just throw in a bunch more sugar! no one will complain. totally forgot to add this when I made it on Christmas. In its nutmegless condition, it was a much less noggy nog.
I was too lazy to add the turmeric on Christmas, because you have to stir and stir and stir to make it disappear and I was, as noted, too lazy. Don’t ask.
I totally forgot this too in my Christmas nog. Are you seeing a pattern here?
