One thing I always consider when discussing food, health, and almost anything else concerning humans, is what is was like 100,000 years ago.
I’m pretty sure 100,000 years ago, this would be a healthy diet:
Water.
Raw Meat.
Raw Eggs
Raw Vegetables.
Raw Fruit.
That’s the whole Guide to Unprocessed Food. The whole Enchilada, so to speak (wait, that’s an Ultra-Processed food, so I take that back.)
Everything else we do to food is processing.
We cook it. Grind it. Ferment it. This is Processing.
A hundred years, two hundred years, or even five-thousand years ago, we were processing food already.
And these simple processing methods change the basic chemical properties of the foods we eat. They make them more “digestible”, and protect them from “spoilage”.
As a result, our bodies natural chemical processes for breaking food down and using it to nourish ourselves become changed and/or incomplete.
At the expense of our health.
Not a lot. But, enough to have an effect on some people. Genetics plays into who is affected, and by how much.
And processing foods ultimately led to Ultra-Processing foods in the last several hundred years.
