10 new recipes for one delicious summer

I spent a humid night dreaming of grilling, and woke up to broken air-conditioning, which means one thing: It is officially summer. Or at least it is over here at Bon Appétit. Our lush June issue just dropped and it is full of the recipes we’ll be cooking all summer, like no-cook fresh corn alfredo pasta, Peruvian-style grilled tofu, and smashed zucchini with tahini and ginger dressing. Each dish offers something a bit new, and totally delicious.

This week’s free recipe is from that same summer package: Peaches Foster. It’s a glorious union of ripe stonefruit and salty-sweet caramel from Test Kitchen editor Rebecca Firkser. Her recipe was strong enough to redeem the brutally hard fruit that was available in March, when recipe development was underway. A generous amount of caramel pools around jammy fruit and crunchy pecans, flambéed with dark rum. (You can do it! Watch Rebecca demo the technique here.) The aromas of cooked sugar, caramelized rum, and heady vanilla combine for a dessert that turns peak fruit into a showstopper for a summer party or anyone who appreciates pyrotechnic food.

It would also be an ideal treatment for other summer gems, like apricots or plums. But here I am waxing on, when we should all be logging off and heading at least to the kitchen, if not outdoors.
