I’m so excited to unveil this month’s anchor dinners. Here’s the basic premise:
To make weekly dinners work, most people can’t cook a new dinner recipe every night.
Typically I aim to cook about 3 dinners per week, eat leftovers or quick-order things the other 2 weeknights, and then leave the weekends open for flexibility.
For August, I’ve come up with 3 different dinner concepts to riff on, as well as a few different sides you can use to create dinners of their own with a simple protein. You can mix and match these ideas each week, until you get tired of them. Then on to the next month’s Anchor Dinner drop!
Alex and I and the kids have been having the best time this summer with a simple above ground pool setup and our grill going non-stop. It’s the time of year where cooking feels so laid back and easy, and I hope you’re able to harness that with some of these recipes.
Also our herb garden is absolutely full of basil and mint, which truly feels like a goldmine in the backyard 😋 That mint chimichurri below was the star of a recent backyard party with friends: everyone asked for the recipe!
Anyway, here’s what’s on tap for August.
Crunch Roll Bowls (Tuna, Tofu, or Salmon)
This recipe is another “flexible protein” bowl — inspired by a sushi crunch roll, it uses crispy fried onions to mimic the crunchy tempura flakes (so good!).
You can make it with one of three proteins: my crispy tofu, marinated salmon, or seared tuna. They’re each equally delicious!

Mediterranean Salmon (or Tilapia)
If you’ve followed me for a while, you know this baked fish concept is my jam! It’s perfect for anytime: tomatoes, olives, red onion, and lemon slices roast under the fish and collapse into a sort of sauce after baking. You can make it with either salmon or a white fish like tilapia.

Chimichurri Grilled Salmon, Chicken or Tofu
I just made a version of this chimichurri with mint instead of parsley for a backyard party and everyone loved it! Either way, this glittering green sauce is absolutely delicious with any sort of grilled protein.

5-Minute Black Bean & Corn Salad
I have brought this black bean and corn salad to parties so many times, and every time someone asks for the recipe, I say: “It’s basically just two cans and a container of pico de gallo!”
This one is such a great simple component to add to recipes: it’s a side, it’s a dip, and it adds lots of fiber and nutrition to any meal.

3-Ingredient Yogurt Fruit Dip
This is the time of year for eating fruit constantly (right?). I’ve eaten a lot of fruit dips over the years and this is the absolute best I’ve had, and it’s 100% homemade. It tastes simply sweet and a base of Greek yogurt keeps it healthy and natural. Pairing this with any meal above rounds it out (my kids are obsessed).
