I’ll blame it on the France of it all (I’m in my final week of a month long visit), but a recent newsletter went out announcing the return of my virtual classes - without the link to the class! I’ve been chatting some lately about food coloring on Instagram lately because I get so many questions about it! First Up: did you know there are different kinds? If you’re using the wrong one, it may not be as pigmented, or it can even cause your recipe to break or separate! I primarily use two: oil based, and water based colorings.
Oil Based Coloring work best in fat-based recipes, because the pigment bonds to fatty ingredients, ultimately blending to make the most intense color.
Use it for: frostings and buttercreams, or add to chocolate for candy making.
Water Based Coloring work best in recipes with higher water content, only a few drops blend in effortlessly to create bold color.
Use it for: meringue, macarons, or royal icing.
My favorite brand is Colour Mill - the quality is exceptional, they blend in effortlessly, and they have the most gorgeous colors to choose from!
