Seasons of change & transition can be the times when it’s easy to slip out of a healthy rhythm. When life lacks structure, it’s quite tempting to coast through the busyness (physically, mentally, & emotionally).

I’ve been thinking a lot about how often we find ourselves in the in-between moments. Instead of allowing them to be stressful seasons where habits go out the door, I’m learning to meet them with intentionality! I do this by creating small anchors that bring steadiness in transition; whether that’s making a little extra time to read in the morning, choosing healthy, nourishing meals (even when ordering out), moving my body consistently, going to bed on time, etc.

This recipe is made for those in-between moments, as well as the moments you just simply want an easy dinner that’s also comforting & delicious!

These Blackened Ginger Lime Chicken & Glass Noodle Veggie Bowls are so fresh & flavorful! Perfectly grilled chicken, lightly steamed bok choy, carrots, onion, sweet potato glass noodles, and more, all tossed in a bright ginger lime sauce! What I love most is how good it is for you. It’s naturally gluten-free, dairy-free, refined sugar-free, & anti-inflammatory, with about 50 grams of protein per serving! Great for any night of the week and stores beautifully if you’re a meal prepper!

Dairy-Free: No dairy ingredients anywhere in this recipe, from the sauce to the protein to the vegetables.

Refined Sugar-Free: The only sweetener is a tablespoon of raw honey, so this bowl skips refined sugar entirely while still hitting that bright, balanced flavor!

Anti-Inflammatory: Ginger, garlic, and extra virgin olive oil bring documented anti-inflammatory compounds (gingerols, allicin, polyphenols) to this dish, alongside zero refined sugar or seed oils!

High-Protein: Two pounds of chicken thighs deliver roughly 50g of protein per serving, well above the threshold for a high-protein meal and enough to support muscle maintenance & satiety!
