One of my favorite things about summer cooking is how little it takes to make dinner feel special.

A hot grill, a handful of fresh herbs, a couple of ripe peaches from the farmers’ market, and dinner is practically done.

Around our house, once the grill comes out for the season, it ends up doing most of the cooking. It keeps the kitchen cool, and honestly, dinner just feels a little more relaxed. There’s no need to spend hours in the kitchen when a hot grill and a few fresh ingredients can do so much.

That’s exactly what this week’s menu is built around.

Five dinners that are fresh, flavorful, and easy enough for busy weeknights—all while sharing ingredients in a way that actually makes sense. The parsley you buy on Monday shows up again later in the week. The red onion gets used in three different meals. Even those extra hamburger buns become homemade Parmesan croutons instead of going stale on the counter.

Buy what you need. Use what you buy. Make dinner for two feel easier all week long.

1. Hatch Chile Pimento Cheese Burgers

Five completely different dinners. One smart grocery list.

  • This week’s menu leans heavily on fresh summer ingredients.

  • Five dinners. Five different flavors. Nothing feels like a repeat.

  • Shared ingredients keep the grocery list practical. Fresh parsley, lemons, red onion, ground beef, and even a few extra hamburger buns all get used more than once throughout the week.

  • Ground beef pulls double duty. Half becomes juicy Hatch Chile Pimento Cheese Burgers, while the other half is transformed into grilled beef kefta with warm spices and fresh herbs.

  • Fresh parsley shows up everywhere. It adds brightness to the kefta, cucumber yogurt sauce, peach relish, lemon couscous, and the gremolata that finishes Friday night’s chicken.

  • One red onion stretches across the week, too. It becomes quick-pickled onions for burger night, adds crunch to the tomato-cucumber salad, and brings just the right bite to the fresh peach relish.

  • Even the leftover hamburger buns have a purpose. Instead of going stale, they’re torn into homemade Parmesan croutons for Monday night’s Caesar salad.

Every dinner should feel like its own meal. The ingredients are what do the sharing.

This week, I finally found peaches worth buying, and they were so good they inspired Wednesday night’s fresh peach relish. If you can find local peaches, I highly recommend picking up a couple. They’re sweet enough that they don’t need much more than a little red onion, parsley, and lemon juice to turn into something that tastes like summer.

A little prep at the beginning of the week makes these dinners come together even faster.

• Make the Hatch chile pimento cheese. You’ll use part of it for burger night, and the leftovers are perfect for snacking.

• Pickle the red onions. They’ll be ready for the burgers and the kefta salad later in the week.

• Shake together the Caesar dressing and refrigerate it until Monday.

• If you’re using wooden skewers for the kefta or chicken, make sure you have them ready to soak before grilling.

• Wash and chop the parsley so it’s ready to use throughout the week.

None of these tasks take very long, but they’ll make weeknight cooking feel much easier.
