While it might seem counterintuitive, writing acknowledgements (thank yous) for condolence and sympathy cards can be a deeply impactful and positive part of bereavement or going through a hard time. Taking a moment each day, or every couple of days, to focus on how grateful you are for others’ support or concern can have a profound impact on feelings of loneliness or despair. Many who have done it say it brings them joy during a difficult time.
Lizzie had an outstanding dinner at Hen of The Wood in Burlington, Vermont this past week, which she discusses in the upcoming episode (#622) of Awesome Etiquette. Inspired by her meal, we’re choosing Emily’s Cream of Corn recipe this week.

TIME: 30 minutes
SERVES: 4
3 tbs. butter
3 tbs. flour
2 1/2 cups very rich milk or cream
1 tsp. salt
1/8 tsp. pepper
2 cups cooked corn cut off the cob
1 medium onion
1 1/2 cups milk
paprika
Blend flour into melted butter in a double boiler, add cream, salt, and pepper. Cook, stirring constantly, till mixture thickens. Cover and keep hot over hot water.
Put the corn and onion into the top of a double boiler with the milk and let all cook for 10 minutes. Strain and press the soft part of the corn kernels through a colander or sieve into the cream in the first double boiler. Stir and serve when all is hot. Sprinkle some paprika on each plate.
