TIME: 20 minutes
SERVES: 2
2 1/2-oz. jar dried beef
2 tbs. butter (sweet if possible)
2 tbs. (scant) flour
1 cup milk
3 tbs. cream
2 pieces of toast
1 egg yolk
This is a delicious breakfast dish.
Melt the butter in a double boiler, blend in the flour, and then add the milk and 2 tbs. of the cream. Beat and cook to make a very smooth sauce. After it thickens, add the meat, pulled into small pieces, stir into the sauce, and cover.
Leave over simmering water till ready to serve. Remove from fire and stir in the egg yolk beaten with the 3rd tbs. of cream. Serve on toast.
NOTE: The egg yolk and 3rd tbs. cream may be omitted, but the result while still good will not be as rich and flavorful.
