Summer is in full swing with camps, lake days, and friends visiting from our home state of Utah.
This week I picked up a bag of Namaste gf flour from Costco because it is so much cheaper than anything else, and tried it out with my crescent roll recipe. I made a few other changes and HOLY SMOKES. FRIEND.
Best gluten free bread product I have ever put in my mouth. Inexpensive, dough was super easy to work with, and they were still soft the next day. I can’t wait to share this recipe with you. CANNOT WAIT.
I’ve been making snack trays for lunch, piling lots of options to meet all the tastes of my 5 kids and myself. They LOVE these boards, and I love how quick and easy they are to put together (plus no oven required). I’ll be doing a series soon on Instagram to give you some ideas, so stay tuned for that.
Basically, just pile all the finger foods your family loves onto a board or platter (a simple plate works too!). Try to have some carbs, produce, and proteins to round things out.

This is an incredibly easy recipe that’s packed with protein and tastes like dessert! Keep it in the freezer for a cool, healthy, and naturally gluten-free treat any time.
Lots of ideas below for flavor variation ideas or create your own!
2 cups full-fat cottage cheese
2 tablespoons honey or maple syrup
3 tablespoons smooth nut or seed butter (cashew or peanut butter are my favs)
Line a small, rimmed baking sheet with parchment paper and set aside.
Combine cottage cheese, honey, and peanut butter in a medium bowl.
Use an immersion blender or the pulse function on a food processor to blend just until smooth. Do not over-mix or it will liquify the cottage cheese.
Spread the cottage cheese mixture evenly over prepared baking sheet without touching the edges of the pan (to avoid sticking)
Add any toppings you want from the variations below, and freeze for at least 3 hours until frozen solid.
Let sit at room temp for 5 minutes for a softer bark.
Melt 1/4 cup chocolate chips in a microwave-safe bowl for 30-45 seconds at full power until melted.
Warm 3 tablespoons peanut butter in microwave for 10-15 seconds just until softened (if you warm it too long, it will burn)
Alternate dollops of melted chocolate and peanut butter on top of the mixture, and swirl with a toothpick to get a marbled effect.
Sprinkle with 2 tablespoons chopped peanuts.
Use almond butter for the nut butter.
Sprinkle with fresh blueberries and crushed Simple Mills Lemon Sweet Thins.
Swap 1/2 cup of the cottage cheese for full fat plain Greek yogurt.
Sweeten ¼ cup strawberry puree with honey or maple syrup to taste, and swirl on top.
Top with crushed gluten free graham crackers.
Swap 1/2 cup of the cottage cheese for full fat plain Greek yogurt.
Top with fresh banana slices (or whatever fruit you like), your favorite gluten free granola (see mine below), and a drizzle of honey or melted chocolate if you want.
Store cottage cheese bark in the freezer up to 3 months. I recommend cutting the bark into individual portions and storing in single layers in an airtight container.
Separate each layer with parchment paper to keep them from sticking
I tried a gluten free granola that knocked my socks off. It’s a small, woman-owned business called Nana Joe’s, and it might have ruined all other granola for me.
All the granolas are gluten free, and they have a lot of grain free options too, including granola bars. My husband, Allan, is also allergic to oats so he hasn’t had a granola bar in almost 15 years. Until he tried this one.
The waffle cone flavor of grain free granola somehow tastes exactly like a waffle cone, and has delightfully large clusters of granola that somehow taste and feel just like regular granola.
Highly recommend.
