I'm running a tight ship this year

If everything has access to you, nothing gets your best. Which is why for 2026, I am running a tight ship and you should too. We are moving away from the “always on” culture and toward the “closed kitchen” mindset.

Having standards is expensive, but not having any will cost you more than just money.

In 2025, nearly 79% of workers worldwide reported burnout symptoms because of blurred limits and boundaries across their professional and personal lives . Michelin-level creators don’t let value leak out through exhaustion or resentment; they accept the upfront cost of rules to protect their output. When a kitchen has no rules, everything becomes negotiable, timing slips, standards weaken, and chaos replaces flow state.

Look at Sukiyabashi Jiro, the legendary 10-seat sushi restaurant in Tokyo and the first one ever to receive 3 Michelin stars.

Jiro is 100 years old, and his program is famously strict:

  • You must arrive exactly on time.

  • Perfume is discouraged.

  • Phones are put away.

  • Sushi is eaten immediately, in the order served, with no customization.

Jiro protects the conditions of his art rather than accommodating the convenience of the guest. He knows that even a few minutes of delay changes the temperature of the rice and the integrity of the bite.
