One of our all time favorite appetizers featuring Nichols Farm squash blossoms. We stuff them with a smoked trout cream cheese, tempura-ale batter and fry them and top them with sweet chile sauce. I think it gives them a flavor reminiscent of crab rangoon.

We have been partnering with Middlebury Farms for years to supply us with the delicious green tomatoes used for this sandwich. Green Tomatoes have always had a special place in my heart. Growing up, my grampa, would pickle them with jalapenos directly from his garden. Secretly I love the jalapeno-dill pickled ones better than the ripe heirlooms available in later months.

Yes, we did use pigs’ head to make these delicious tacos. By using the lesser used cuts of the animal we help ensure that the whole animal is being used which eliminates waste. This isn’t just important, but it also forces chefs to use their culinary expertise to make these cuts taste so good. So don’t freak out. Give it a try. Your tastebuds will thank you.
