I made this on a whim one night when I literally only had 30 minutes and some salmon that absolutely needed to be cooked before it sat in my fridge too long. Annnnd this ended up becoming one of those accidental dinners that immediately goes into the permanent rotation. It’s creamy, crunchy, herby, fresh and tastes way more special than it actually is.

Obviously, I’ll still be sharing plenty of chicken, steak, pasta, etc., but I really want to incorporate more seafood meals into my diet this summer in the spirit of romanticizing dinner and embracing the season!!
When it comes to sourcing seafood, I LOVEEE Wild Fork for seafood at a much better price point. I buy their wild king Alaskan salmon constantly and it’s significantly more affordable than most grocery stores near me. Their scallops are also great and will actually be featured on my June menu this month (hint: theme is coastal Mediterranean summer and it’s a tennnn.)
Ok, back to this recipe. The best part about this orzo salad is that it barely requires a recipe, lol. You can eyeball the whole thing. Just toss cooled orzo with your favorite ranch dressing and a bunch of fresh herbs and crunchy vegetables until it tastes good to you. Start with about 1/2 cup of ranch dressing and adjust from there depending on how creamy you like it. I used an organic buttermilk ranch from Whole Foods, but you could absolutely use homemade ranch or my High Protein Ranch Dressing instead.
Scooping the seeds out of the cucumbers keeps the salad crisp and creamy instead of watery, especially if you’re making it ahead. I also love using either Trader Joe’s Ranch Seasoning or Hidden Valley Ranch Seasoning on the salmon here.
Dry the salmon well: Patting the salmon dry before seasoning helps it roast up crispier around the edges instead of steaming. Season GENEROUSLY with that ranch seasoning once it’s dry!!
Scoop out the cucumber seeds: This keeps the salad creamy and crisp instead of watery, especially if you’re meal prepping it ahead.
Pasta water as salty as the sea: Orzo absorbs a lot of flavor while cooking, so properly salted water makes a huge difference in the final salad. You’re going to rinse the cooked orzo at the end to rapidly cool it, so I promise the exterior salt will get washed away leaving you with a beautifully flavored pasta.
Roasting the salmon at a high temperature gives you those crispy golden edges while keeping the inside buttery and tender. Letting the seasoned salmon sit for a few minutes before roasting also helps the ranch seasoning flavor the fish more deeply.
I can’t choose one occasion to serve this… it’s perfect for everything from quick weeknight dinners with the kids (the way I tend to serve basically everything) to relaxed meals with friends. It also holds up beautifully in the fridge, so the leftovers are just as good.
Side 1: Roasted asparagus or green beans
Side 2: Simple arugula or spinach salad
Wine pairing: Crisp Sauvignon Blanc or chilled Pinot Grigio
Mocktail pairing: Sparkling cucumber lemon water with fresh mint
Salmon: You could absolutely use shrimp or even crispy chicken here instead.
Orzo: Pearl couscous or small pasta shapes work well.
Herbs: Dill and parsley are classic, but basil or chives would also be delicious.
Ranch dressing: Homemade ranch, bottled ranch or high-protein ranch all work great here.
4–5 Persian cucumbers
1 small shallot
1 bunch fresh dill
1 bunch fresh parsley
1 1/2 lb salmon fillet
1 box orzo
Ranch seasoning
Ranch dressing
Avocado oil
Red wine vinegar
Kosher salt
Black pepper
Cube and season the salmon. Store covered in the fridge.
Prep the cucumbers, shallot and fresh herbs. Store separately in airtight containers.
Cook the orzo and toss lightly with a little ranch dressing so it doesn’t stick together.
Mix the full ranch orzo salad and refrigerate if desired.
Remove the salmon from the fridge so it can lose some chill before roasting.
Preheat the oven to 425°F.
Taste the orzo salad and adjust seasoning if needed.
Roast the salmon until crispy around the edges and cooked through.
Toss the orzo salad with additional ranch dressing if it needs refreshing.
Pile the cold ranch orzo salad into bowls or onto a platter.
Top with warm crispy salmon bites.
Finish with extra fresh herbs and black pepper.
Store the salmon and ranch orzo salad separately in airtight containers for the best texture.
Keep extra herbs separate until serving if possible.
Warm the salmon at 375°F for about 8 minutes until heated through and crisp again.
Air fry the salmon at 375°F for 3–4 minutes for the best texture.
Microwave gently in short intervals if needed, though the salmon stays crispier using the oven or air fryer.
Keeps well in the fridge for up to 4 days.
The salmon can be frozen for up to 2 months. The orzo salad is best fresh and refrigerated only since the dressing and cucumbers soften after thawing.
Prep cucumbers + herbs (10 min) → Boil orzo (10 min) → Mix ranch orzo salad (5 min) → Roast salmon bites (12–15 min) → Assemble + serve (2 min)
You’re building contrast here: crispy salmon, cold creamy orzo, crunchy cucumbers, sharp herbs, tangy ranch. Nothing complicated, just really good textures and flavors layered together in the right way. That’s the kind of dinner that ends up feeling way fancier than the amount of effort you actually put in.
And honestly? If you eat it standing over the kitchen counter straight from the mixing bowl before dinner’s even technically ready… that’s part of the experience too. After all, any room can be the dining room. :) xx
