That’s it.
Using hummus and fresh mint in these wraps adds a literal layer of complexity to them flavor and texture-wise, but it’s so easy and quick if you have these items on-hand. I’ve been making a point to keep this hummus on our regular shopping list so we always have some around, and the mint, too.
Fresh mint isn’t something we used to buy regularly, but since using it for these wraps as well as for some Asian inspired fresh spring rolls and lettuce wraps, it’s becoming more of a go-to for us lately.
Add grilled chicken, romaine, cucumber, feta, your favorite hot sauce, wrap it all in warm pita, and suddenly lunch feels like it came from your favorite Mediterranean café.
I’ve made this more times than I can count lately, and I’m still not tired of it.
1 warm wrap (I like Mission brand carb-smart tortillas that I find at Costco, charred over my gas range)
+ a generous swipe of creamy hummus
+ chopped fresh mint
+ sliced grilled chicken (or use the frozen skewers I featured in this post about TJs finds not long ago)
+ thinly sliced cucumber
+ roughly chopped romaine
+ crumbled feta
+ a drizzle of hot sauce (My current favorite is a local one - Moto Calabrian Chili - I put this stuff on everything lately.)
10/10 lunch every time!
