Steak Sliders with Caramelized Onions & Homemade Brioche
Tender grilled steak, sweet and savory caramelized onions, melted mozzarella, and a simple burger sauce with fresh white onion, all packed inside soft homemade brioche.
These sliders are basically everything you want from a proper steak sandwich, just in a smaller and much more dangerous format because it’s almost impossible to stop after one.
The steak is kept simple with just salt so the beef still tastes like beef. The onions are slowly caramelized with brown sugar, soy sauce, and a little oyster sauce, while the burger sauce brings creaminess, acidity, heat, and a fresh bite from finely chopped white onion.
Homemade brioche makes a huge difference here. It is soft enough to absorb the juices without falling apart, but still rich and buttery enough to stand up to the steak.
Makes 8-12 sliders
600–800 g steak, such as ribeye, sirloin, striploin, or rump ( I used Flank steak - cheaper but perfect texture for this type of dish!)
Salt
1 tbsp neutral cooking oil
Black pepper, optional
The exact amount depends on the size of your sliders. Aim for approximately 50-70 g of steak per slider.
3–4 medium red onions
1 tbsp neutral cooking oil
20 g butter
1 tbsp brown sugar
1 tbsp soy sauce
1–2 tsp oyster sauce
1 tsp balsamic vinegar or red wine vinegar
Salt and black pepper
Small splash of water, as needed
