Today I’m sharing a repeat recipe in my home: Sweet and Spicy Cashew Chili Lettuce Wraps. It’s the dinner I make when I’m short on ideas, time, and energy but still want something tasty and satisfying. The steps are quick, with a strong flavor payoff—whisk together the sauce, brown your ground chicken, pour the sauce over everything, and you’re basically done. Even my husband has this one memorized.
Got extra veggies, like bell peppers, mushrooms, onions, or broccoli nearing expiration in the fridge? Chop them up and toss them in! Have a pound of ground turkey, beef, or pork waiting in the freezer to be used up? That works, too! And if lettuce wraps aren’t your vibe, the protein base can easily be added to grain bowls. As a meal prepper, I love to double up and keep leftovers in the fridge or freezer for later.
