This Mango Chia Seed Pudding is a creamy, high-protein treat that doubles as the perfect grab-and-go breakfast or energizing afternoon snack. It’s fruity, refreshing, and you’ll quickly find yourself looking for any excuse to make it.
With just a handful of simple ingredients, this pudding transforms into a nutrient-dense meal that’s satisfying, filling, and truly gets better with every spoonful.
Chia seeds: These tiny seeds are packed with fiber and omega-3s, helping support digestion, stabilize blood sugar, and provide long-lasting energy. Once they soak, they create that thick, pudding-like texture we’re after.

How to store: You can use any airtight container you have! I like to use 32 oz glass mason jars. The metal lids they came with rusted over time, so I switched to these plastic ones — and they’ve held up great! These are good for up to 5 days in the fridge.
Don’t skip the toppings! You can use any of your favorites — mine include fruit, seeds, nuts, granola and honey.

3 tablespoons chia seeds
1 heaping 1/2 cup frozen mango
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
1 scoop vanilla protein powder (I use Orgain.)
1/2 cup milk, plus 1/3 cup milk
Suggested Toppings:
Fresh mango
Berries
Granola
Nuts or seeds
Shredded coconut (optional)
Drizzle of honey
Add the frozen mango, 1/2 cup milk, protein powder, cinnamon, vanilla, and salt to a blender. Blend until smooth.
In a jar or airtight container, combine the mango mixture, remaining 1/3 cup milk, and chia seeds. Stir until evenly combined.
If desired, fold in fresh mango chunks and shredded coconut.
Let the mixture sit for 10 minutes, then stir again to prevent the chia seeds from clumping.
Refrigerate for at least 2–4 hours, or overnight, until thickened.
Stir once more before serving, then top with fresh mango, berries, granola, nuts or seeds, and a drizzle of honey.
