How have I never thought to make these before? Wyatt from thatguywywy (his IG handle) and I have been following each other on various platforms for years and he has made some of my dishes and I have made some of his. I love that kind of sense of community. His version are called Tennessee Onions and while they looked incredible… I knew I wanted to go the French route on mine.
These are melt in your mouth delicious. The onions become soft and tender and mixed with the beef stock, Dijon and heavy cream; they become otherworldly.
This is one of those instances where you take really humble, simple ingredients and the method in which you cook them transforms them into something truly special. While these are probably something you are going to want to cook when the weather turns and cools down a little, I simply couldn’t wait.
